Amuse of golden trout and California Osetra caviars in a dill and lemon
potato nest with crème fraiche, pickled red onion, chopped egg and chives

choice of:

Beet pasta ravioli filled with goat cheese and sweet peas,
served with basil pesto cream and walnuts


Miso-honey glazed prawns served in wonton cup with sesame Asian slaw


Lobster bisque with nori strips


Intermezzo of green apple sorbet

Entree choice of:

Honey and pistachio crusted Salmon mignon stuffed with lobster, served with
Grand Marnier beurre blanc, butternut squash gratin and steamed broccolini


Herb marinated Elk chop with syrah reduction sauce, parsnip and sweet
potato marbled mashers, apple chutney, baby carrots and braised endive


Smoked breast of pheasant with sage butter and balsamic streaker, served
with savory bread pudding and maple-bacon glazed brussels sprouts


Bacon wrapped filet of beef with seared sea scallop on exotic mushroom-mascarpone
risotto with madeira demi glace and prosciutto wrapped asparagus


Salad of winter greens with julienne of bosc pear, shaved
Manchego cheese with warm pear-truffle vinaigrette


Dessert choice of:

Dark chocolate cheesecake or egg nog crème brulee
